Divide beef into 8 loose balls (3 oz each). Don't overwork the meat.

Heat a cast iron skillet or griddle over high heat.

Place ball on hot surface, immediately smash flat with a heavy spatula. Season with salt and pepper.

Cook until crispy brown crust forms, about 2 minutes. Flip and immediately add cheese.
